Sparkling Pomegranate Mimosas

(Serves 4)

Ingredients:

  • 1 lime, halved
  • 2 tbsp. sugar
  • 1 c. pomegranate juice (very cold)
  • 1 bottle Champagne (very cold)
  • 8 fresh cranberries
  • 4 small sprigs fresh rosemary (4-5 inches)

Directions:

  1. Rub rims of champagne flutes with lime and dip in sugar. Pour 1/4 cup pomegranate juice into each glass and top with Champagne.
  2. Use a toothpick to poke a hole through cranberries. Remove bottom leaves from rosemary sprigs and thread skewer through cranberries to garnish mimosas.

Liz’s Tidbits:

  • Feel free to substitute Cranberry juice for the Pomegranate juice.  Just make sure both the juice AND Champagne are very cold!
