Secret’s in the Sauce! Grilled Lamb Chops with a Spicy Mint Sauce

Ok….if you saw the movie “Fried Green Tomatoes”, then I’m sure you remember  Sipsey saying “Secret’s in the Sauce”. And who could forget her quote, ” Oh it don’t make no kind of sense. Big ol’ ox like Grady won’t sit next to a colored child. But he eats eggs- shoot right outta chicken’s ass!”.  GREAT MOVIE!  If you haven’t seen it, RENT IT! OK…so what does the movie have to do with cooking?  Well in tonight’s version of “What’s for Dinner”, the secret was in the sauce.

Although it rained most of the day, I decided to pretend it was summer.  I’m SO READY FOR SUMMER!!!  Anyway, I had hubby fire up the grill, and I got a plate of lamb chops seasoned up and ready to go. Speaking of seasoned, if you haven’t tried Grill Mates Montreal Steak Seasoning, YOU SHOULD!  It has become my go-to seasoning for everything.  For my family, it has the perfect blend of everything.  I use it on chicken, fish, beef, lamb, you name it, I put in on it.

So, I have to say, Hubby is pretty darned good when it comes to grilling.  In fact, He’s a GRILLIN’ MACHINE!   Here’s the lowdown for lamb chops.

I got mine at Costco.  Nine good sized chops (about 2″ thick) were about $20. Preheat the gas grill on high for about 10 minutes.  Drizzle with olive oil and season.  Put the chops on the grill, cover, and let them cook about 3 minutes before turning.  Since there’s a fair amount of fat in chops, keep an eye on them.  If they start to flare, move them around.  You’ll want to cook them a total of about 10-11 minutes for medium to medium rare.  You might want to have a spray bottle of water handy for the flare ups.  Hubby just keeps moving them around, making sure they don’t get burned, and they turn out perfect!  Nice and pink in the middle with a crusty outside,  just like we like them.

I love a good mint sauce for my lamb chops.  So, here’s the secret “very complicated” sauce.  Are you ready?  Mix equal parts of mint jelly and jalapeno jelly in a bowl.  Zap in microwave for about 25 seconds and stir.  Drizzle over lamb chops.  Folks, it doesn’t get much easier than that, and Boy!  Is it Good! A little bit of mint & a little bit of spice.  YUM!  Try it, and let me know what you think!
