Pork Medallions with Mustard Sauce

I’m always on the lookout for great recipes, and today, fellow blogger, “There’s a Newf in my Soup”  posted a pork tenderloin recipe that sounded really good.  So good, in fact, that I decided to make it tonight for dinner.  The recipe is adapted from a Fine Cooking recipe for pork chops, but this dish is made with pork tenderloin cut into 1″ medallions.  The dish is simple to make and very delicious.  It makes a great weeknight meal, and the presentation is so pretty, it could easily be a dish to entertain with.  My guys LOVED it, and said it was one of the best pork dishes they’ve had.  There’s a beautiful picture along with the recipe here.  Check it out…you won’t be disappointed!
